  • 1 pound Italian sausage Choose between mild or spicy.
  • 1 medium onion Diced.
  • 2 cloves garlic Minced.
  • 3 medium carrots Sliced.
  • 2 stalks celery Diced.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes Optional.
  • 6 cups chicken broth Base of the soup.
  • 14.5 ounces diced tomatoes Undrained.
  • 9 ounces refrigerated cheese tortellini The star of the dish.
  • 2 cups fresh spinach For nutrition.
  • Salt and pepper To taste.
  • Grated Parmesan cheese For serving.

Method
 

  1. Prepare all ingredients by washing and slicing the carrots and celery, dicing the onion, and mincing the garlic.
  2. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook for 5-7 minutes, breaking it apart as it browns.
  3. Add the diced onion, minced garlic, sliced carrots, and diced celery to the pot. Sauté for about 5 minutes until tender.
  4. Stir in the dried thyme, oregano, and red pepper flakes. Cook for another minute, then pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
  6. Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Season with salt and pepper to taste, then serve topped with grated Parmesan cheese.
