- Gather all ingredients and ensure boudin sausage is uncased and rice is cooked.
- In a large mixing bowl, combine boudin sausage, cooked rice, and chopped green onions. Add breadcrumbs, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.
- Roll the mixture into balls about 1 to 1.5 inches in diameter and place on a baking sheet lined with parchment paper.
- Lightly spray or brush the tops of the boudin balls with cooking spray or olive oil.
- Preheat oven to 375°F and bake boudin balls for 25-30 minutes until golden brown.
