Boudin Mixture
  • 1 pound boudin sausage Remove casing before mixing.
  • 1 cup cooked white rice
  • 1/2 cup green onions, chopped
  • 1/2 cup breadcrumbs Use plain or seasoned.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper Adjust to spice preference.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten Acts as a binder.
  • cooking spray or olive oil For greasing the baking sheet.

Method
 

  1. Gather all ingredients and ensure boudin sausage is uncased and rice is cooked.
  2. In a large mixing bowl, combine boudin sausage, cooked rice, and chopped green onions. Add breadcrumbs, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.
  3. Roll the mixture into balls about 1 to 1.5 inches in diameter and place on a baking sheet lined with parchment paper.
  4. Lightly spray or brush the tops of the boudin balls with cooking spray or olive oil.
  5. Preheat oven to 375°F and bake boudin balls for 25-30 minutes until golden brown.
