Method
 

  1. Prepare all your ingredients by peeling and dicing the potatoes, dicing the onion, and chopping the cooked beef bacon.
  2. Cook raw beef bacon in a skillet over medium heat until crispy, about 5-7 minutes. If using pre-cooked bacon, chop and set aside.
  3. In the same skillet, add olive oil and heat over medium heat. Add diced potatoes and onion, cooking for 10-12 minutes until tender and lightly browned.
  4. In a large bowl, whisk together eggs, whole milk, salt, and pepper until smooth and creamy.
  5. Reduce heat to low, add chopped beef bacon to the skillet, and stir. Pour the egg mixture over the potato and bacon mixture, gently stirring to combine.
  6. Sprinkle shredded cheddar cheese over the top and transfer the skillet to a preheated oven. Bake for 20-25 minutes until set and lightly golden.
  7. Let the frittata cool for a few minutes, then garnish with chopped parsley before serving.
