- Thaw the puff pastry in the refrigerator for 30 minutes. Roll it out and cut into six equal rectangles.
- In a medium bowl, combine blackberries, goat cheese, honey, and thyme. Mash the blackberries gently.
- Place a tablespoon of filling in the center of each rectangle, fold over to create a triangle, and seal the edges.
- Preheat oven to 400°F. Brush tops with beaten egg and sprinkle with coarse sugar. Bake for 15-20 minutes until golden brown.
