Once boiling, stop stirring and let it cook for 5 minutes until it reaches the soft ball stage (235°F).
Remove from heat and add the toasted pecans and vanilla extract. Stir well.
Drop spoonfuls of the mixture onto the prepared parchment-lined baking sheet, leaving space between each.
