  • 1 cup heavy cream Base of the Alfredo sauce.
  • 1 cup shredded mozzarella cheese Melts beautifully.

Method
 

  1. Cook the cheese tortellini according to the package instructions, about 3-5 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook for 5-7 minutes until browned.
  3. Add diced bell pepper, onion, and minced garlic. Sauté for another 3-4 minutes until vegetables are tender.
  4. Stir in Cajun seasoning, then pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until sauce thickens.
  5. Add cooked tortellini, mozzarella, and Parmesan cheeses. Stir until cheeses melt and tortellini is coated. Season with salt and pepper to taste. Garnish with parsley before serving.
