  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced (any color)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper (adjust to taste)
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 15-ounce cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn (fresh, frozen, or canned)
  • 1 4-ounce can diced green chilies
  • Salt and pepper to taste
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 1 lime cut into wedges (for serving)

Method
 

  1. Dice the chicken into bite-sized pieces and wash hands and surfaces.
  2. Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft and translucent. Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
  3. Add Cajun seasoning, ground cumin, smoked paprika, and cayenne pepper. Stir to coat vegetables. Add diced chicken and cook until browned on all sides, about 5-7 minutes.
  4. Stir in white beans, chicken broth, corn, and diced green chilies. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes.
  5. Taste and season with salt and pepper. Optionally stir in heavy cream or sour cream before serving. Serve hot, garnished with fresh cilantro and lime wedges.
