Dice the chicken into bite-sized pieces and wash hands and surfaces.
Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft and translucent. Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
Add Cajun seasoning, ground cumin, smoked paprika, and cayenne pepper. Stir to coat vegetables. Add diced chicken and cook until browned on all sides, about 5-7 minutes.
Stir in white beans, chicken broth, corn, and diced green chilies. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes.
Taste and season with salt and pepper. Optionally stir in heavy cream or sour cream before serving. Serve hot, garnished with fresh cilantro and lime wedges.
