  • 2 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 4 large flour tortillas

Method
 

  1. Peel and dice the potatoes, then boil them in water for 10 to 15 minutes until tender. Drain and return to pot.
  2. Add olive oil, garlic powder, onion powder, paprika, salt, and pepper to the potatoes. Mash until smooth, then stir in cheddar cheese.
  3. Lay out tortillas, spoon potato mixture onto each, add sour cream and cilantro if using, then fold and roll tightly.
  4. Heat a skillet over medium heat, place burritos seam-side down, and cook for 2 to 3 minutes on each side until golden brown.
