- Peel and dice the potatoes, then boil them in water for 10 to 15 minutes until tender. Drain and return to pot.
- Add olive oil, garlic powder, onion powder, paprika, salt, and pepper to the potatoes. Mash until smooth, then stir in cheddar cheese.
- Lay out tortillas, spoon potato mixture onto each, add sour cream and cilantro if using, then fold and roll tightly.
- Heat a skillet over medium heat, place burritos seam-side down, and cook for 2 to 3 minutes on each side until golden brown.
