Ingredients
  

Potatoes
  • 2 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup sour cream (optional for serving)
  • 1 cup salsa (optional for serving)

Method
 

  1. Peel and dice the potatoes, then boil in salted water for 15 minutes until tender. Drain and return to pot.
  2. Add olive oil, garlic powder, onion powder, paprika, salt, and pepper to the potatoes. Mash until smooth, then stir in cheddar cheese.
  3. Warm tortillas in a skillet for 30 seconds on each side. Spoon potato mixture onto the center, fold sides, and roll tightly.
  4. Cook burritos seam-side down in a skillet for 2-3 minutes on each side until golden brown and crispy.
