Meat Mixture
  • 1 pound ground beef
  • 1 pound breakfast sausage
  • 8 ounces cream cheese, softened
  • 1 can (10 ounces) diced tomatoes with green chilies (Rotel), drained
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Method
 

  1. Gather all your ingredients.
  2. In a large mixing bowl, combine the ground beef and breakfast sausage. Add the softened cream cheese and mix until well combined.
  3. Add the drained Rotel tomatoes, shredded cheddar cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until evenly mixed.
  4. Roll the mixture into balls about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
  5. Preheat your oven to 375°F. Bake the meatballs for 25-30 minutes until golden brown and cooked through.
  6. Let the meatballs cool for a few minutes and garnish with fresh parsley before serving.
