Chop the pitted cherries into small pieces and place them in a medium saucepan over low heat. Add the caramel candies, heavy cream, and vanilla extract. Stir gently until the caramel is melted and the mixture is smooth. Remove from heat and let cool slightly.
In a large bowl, mix the crushed graham crackers, powdered sugar, chopped nuts (if using), and salt. Pour the cooled cherry and caramel mixture into the dry ingredients and stir until well combined.
Roll the mixture into balls about 1 inch in diameter and place them on a parchment-lined baking sheet.
Chill the balls in the refrigerator for at least 30 minutes to firm up.
Melt the chocolate chips and coat the chilled balls in chocolate. Allow them to set in the refrigerator.
