Ingredients
  

Vegetables and Chicken
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, sliced thin
  • 2 cups mixed vegetables (bell peppers, carrots, snow peas)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 8 ounces lo mein noodles
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 green onions chopped (for garnish)

Method
 

  1. Prepare all ingredients: slice chicken, chop vegetables, mince garlic and ginger, and cook lo mein noodles according to package instructions.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add sliced chicken and cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add mixed vegetables, minced garlic, and ginger. Stir-fry for 3-4 minutes until tender-crisp.
  4. Return cooked chicken to the skillet, add cooked lo mein noodles, soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Toss everything together and cook for an additional 2-3 minutes until heated through.
  5. Serve hot, garnished with chopped green onions.
