Method
 

  1. Gather your ingredients.
  2. Trim the crusts off the bread and flatten each slice with a rolling pin.
  3. Mix cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Spread the cream cheese mixture on each slice of bread and roll tightly.
  5. Whisk together eggs, milk, vanilla extract, and ground cinnamon.
  6. Dip each roll-up in the egg mixture until fully coated.
  7. Cook roll-ups seam side down in a skillet with melted butter for 2-3 minutes on each side until golden brown.
  8. Roll cooked roll-ups in a mixture of sugar and ground cinnamon, then serve warm with maple syrup.
