  • 1/4 cup plain Greek yogurt

  • 1/4 cup red onion, finely chopped
  • 1/4 cup sweet pickle relish
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 8 slices bread (white, whole wheat, or your choice)

Method
 

  1. Cook the chicken by boiling or baking until fully cooked, about 20-30 minutes. Let it cool before shredding or dicing.
  2. Prepare the dressing by mixing mayonnaise, Greek yogurt, and Dijon mustard in a large bowl.
  3. Combine the cooked chicken with the dressing, celery, red onion, and sweet pickle relish. Mix gently and season with salt and pepper.
  4. Assemble the sandwich by spreading the chicken salad on a slice of bread, adding lettuce if desired, and topping with another slice of bread.
