Oranges
  • 2 large oranges Choose fresh, juicy oranges for the best flavor.
  • 2 cups granulated sugar For the syrup.
  • 1 cup water Essential for dissolving the sugar.
  • 1 teaspoon vanilla extract Adds depth of flavor.
  • 1/4 teaspoon salt Enhances sweetness.
  • 1 cup granulated sugar (for coating) Gives a sweet, crunchy exterior.

Method
 

  1. Prepare the oranges by removing the zest with a vegetable peeler, aiming for long strips.
  2. Make the sugar syrup by combining orange zest, water, and granulated sugar in a saucepan. Bring to a boil and then simmer for 30 minutes.
  3. Remove from heat, stir in vanilla extract and salt, then transfer zest to a wire rack to cool for 1 hour.
  4. Roll cooled zest in granulated sugar until well coated, then place back on the wire rack to dry for 2 hours.
