  • 1 cup cottage cheese drained well
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the drained cottage cheese, brown sugar, honey, and vanilla extract. Mix until well blended.
  3. In another bowl, mix together the almond flour, rolled oats, cocoa powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir gently until just combined. Fold in the chocolate chips.
  5. Scoop out the dough using a tablespoon and place it onto the prepared baking sheet, leaving about 2 inches between each cookie.
  6. Bake for 12-15 minutes until the edges are firm and the tops look set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
