Ingredients
  

Cottage Cheese
  • 1 cup cottage cheese well-drained
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional
  • 1/2 cup chopped nuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained cottage cheese, granulated sugar, softened butter, vanilla extract, and the egg. Mix until well blended and creamy.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  4. Scoop out portions of dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake the cookies for 12-15 minutes until the edges are lightly golden and the centers remain soft.
  6. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
