Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup unsalted butter
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional)

Method
 

  1. Marinate the chicken pieces with salt, pepper, and lemon juice for 15-30 minutes.
  2. Prepare the Cowboy Butter Sauce by melting butter and mixing in Worcestershire sauce, Dijon mustard, and lemon juice.
  3. Preheat the oven to 400°F and prepare a baking sheet.
  4. Dredge marinated chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  5. Place coated chicken on the baking sheet, drizzle half of the Cowboy Butter Sauce over them, and bake for 15-20 minutes.
  6. Drizzle remaining sauce over the chicken bites and serve.
