- Gather all your ingredients.
- Prepare the vegetables by dicing the onion and bell pepper, and mincing the garlic.
- In a large pot, heat olive oil over medium heat. Sauté the onion and bell pepper for 5 minutes, then add garlic and cook for 1 minute.
- Add ground beef to the pot, breaking it apart as it cooks. Stir until browned, about 5-7 minutes. Drain excess fat.
- Combine black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth in the pot. Stir well.
- Add chili powder, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
- Taste and adjust seasoning if needed. Serve hot, garnished with cilantro or parsley if desired.
