Method
 

  1. Gather all your ingredients.
  2. Prepare the vegetables by dicing the onion and bell pepper, and mincing the garlic.
  3. In a large pot, heat olive oil over medium heat. Sauté the onion and bell pepper for 5 minutes, then add garlic and cook for 1 minute.
  4. Add ground beef to the pot, breaking it apart as it cooks. Stir until browned, about 5-7 minutes. Drain excess fat.
  5. Combine black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth in the pot. Stir well.
  6. Add chili powder, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  7. Taste and adjust seasoning if needed. Serve hot, garnished with cilantro or parsley if desired.
