Method
 

  1. Gather all your ingredients.
  2. Chop the onion and bell pepper, mince the garlic, and dice the potatoes.
  3. Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 5 minutes until translucent. Add ground beef and cook for 7-10 minutes until browned.
  4. Add diced tomatoes, kidney beans, corn, and beef broth. Stir in chili powder, cumin, paprika, salt, and pepper.
  5. Add diced potatoes and chopped bell pepper. Cover and simmer for 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs if desired.
