Preheat your oven to 350°F and line a baking sheet with aluminum foil or parchment paper.
Arrange the saltine crackers in a single layer on the prepared baking sheet.
Melt 1 cup of unsalted butter in a medium saucepan over medium heat. Stir in 1 cup of packed brown sugar and bring to a boil while stirring constantly. Allow to boil for 3 minutes without stirring.
Remove the caramel from heat and pour it evenly over the arranged saltine crackers, spreading it gently with a spatula.
Bake in the preheated oven for 5-7 minutes until bubbly.
Immediately sprinkle 2 cups of semi-sweet chocolate chips over the hot caramel and let them sit for a couple of minutes to soften. Spread the melted chocolate evenly over the top.
Let the Cracker Candy Delight cool at room temperature for 30 minutes, then refrigerate for at least 60 minutes to set completely. Break into pieces to serve.
