Ingredients
  

Cabbage and Carrots
  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup apples, diced preferably Granny Smith or Honeycrisp
  • 1/2 cup dried cranberries
  • 1/4 cup green onions, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Wash all fresh vegetables. Finely shred the green and red cabbage. Grate the carrots and dice the apples.
  2. In a small bowl, mix mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
  3. In a large bowl, combine the prepared vegetables and pour the dressing over them. Toss gently to coat.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
