  • 2 cups cooked shredded chicken
  • 1 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup cooked rice (white or brown)
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil

Method
 

  1. Prepare the chicken by cooking it until fully done, then shred into bite-sized pieces.
  2. In a large mixing bowl, combine buffalo sauce and softened cream cheese until smooth.
  3. Add shredded chicken, sour cream, shredded cheddar cheese, cooked rice, chopped green onions, garlic powder, onion powder, salt, and black pepper to the buffalo sauce mixture. Stir until well combined.
  4. Transfer the mixture into a greased 9x13 inch baking dish and spread evenly. Mix panko breadcrumbs with olive oil and sprinkle over the top.
  5. Preheat oven to 350°F. Bake for 25-30 minutes until bubbly and golden brown. Let cool for 5 minutes before serving.
