Ingredients
  

Cauliflower
  • 2 cups cauliflower florets Fresh or frozen
  • 1 pound cooked chicken, shredded Rotisserie chicken works well
  • 1 cup buffalo sauce Choose your favorite brand
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Method
 

  1. Prepare the cauliflower by boiling in salted water for 5 minutes until tender but firm. Drain and set aside.
  2. Cook the chicken if not already cooked, then shred it into bite-sized pieces.
  3. Mix softened cream cheese, sour cream, and buffalo sauce in a bowl until smooth. Add garlic powder, onion powder, salt, and pepper, and stir well.
  4. In a casserole dish, combine cooked cauliflower and shredded chicken. Pour the buffalo sauce mixture over and stir until well coated.
  5. Preheat oven to 350°F. Top with shredded cheddar cheese and green onions. Bake for 25-30 minutes until cheese is bubbly and golden brown.
