Ingredients
  

Pasta
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 14.5 ounces diced tomatoes, drained 1 can
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 8 to 10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the diced tomatoes and cook for another 2 to 3 minutes.
  3. Lower the heat and add heavy cream and Italian seasoning. Simmer for about 5 minutes, then season with salt and pepper. Add the cooked penne pasta and toss to coat.
  4. Remove from heat and stir in grated Parmesan cheese. Toss to combine and serve garnished with fresh basil leaves.
