Gnocchi
  • 2 cups potato gnocchi Choose fresh or store-bought gnocchi for best results.
  • 2 tablespoons olive oil For achieving crispy texture.
  • 3 cups fresh spinach Roughly chopped.
  • 1 cup feta cheese Crumbled.
  • 2 cloves garlic Minced.
  • 1 teaspoon red pepper flakes Optional.
  • salt and pepper To taste.
  • 1 lemon fresh lemon juice Squeezed.
  • fresh parsley Chopped, for garnish.

Method
 

  1. If using dried or frozen gnocchi, cook according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chopped spinach and sauté for 2-3 minutes until wilted.
  3. Add prepared gnocchi to the skillet, fold gently into the spinach. Add minced garlic, season with salt and pepper, and cook for another 1-2 minutes.
  4. Let the gnocchi sit undisturbed for 5-7 minutes to achieve a crispy texture. Stir gently to ensure even crisping.
  5. Remove from heat, fold in crumbled feta cheese and squeeze fresh lemon juice over the top. Toss gently to combine.
