- If using dried or frozen gnocchi, cook according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chopped spinach and sauté for 2-3 minutes until wilted.
- Add prepared gnocchi to the skillet, fold gently into the spinach. Add minced garlic, season with salt and pepper, and cook for another 1-2 minutes.
- Let the gnocchi sit undisturbed for 5-7 minutes to achieve a crispy texture. Stir gently to ensure even crisping.
- Remove from heat, fold in crumbled feta cheese and squeeze fresh lemon juice over the top. Toss gently to combine.
