- Prepare the gnocchi. If using dried or frozen gnocchi, boil in salted water for 2-3 minutes until they float. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chopped spinach and sauté for 2-3 minutes until wilted.
- Add the crispy gnocchi to the skillet with the spinach. Sprinkle in minced garlic and red pepper flakes. Stir gently to mix.
- Let the gnocchi cook undisturbed for 5-7 minutes until golden brown and crispy. Stir gently to ensure even cooking.
- Remove from heat and fold in crumbled feta cheese and lemon juice. Season with salt and pepper to taste.
