Method
 

  1. Prepare the gnocchi. If using dried or frozen gnocchi, boil in salted water for 2-3 minutes until they float. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chopped spinach and sauté for 2-3 minutes until wilted.
  3. Add the crispy gnocchi to the skillet with the spinach. Sprinkle in minced garlic and red pepper flakes. Stir gently to mix.
  4. Let the gnocchi cook undisturbed for 5-7 minutes until golden brown and crispy. Stir gently to ensure even cooking.
  5. Remove from heat and fold in crumbled feta cheese and lemon juice. Season with salt and pepper to taste.
