  • 1 cup cooked black beans drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 tablespoon olive oil for brushing
  • Fresh cilantro for garnish
  • Salsa or guacamole for serving

Method
 

  1. Prepare the filling by mashing black beans and mixing in corn, spices, salt, and pepper.
  2. Warm corn tortillas in a skillet for about 30 seconds on each side.

  4. Preheat oven to 400°F (200°C) and brush taquitos with olive oil before baking.
  5. Bake taquitos for 15-20 minutes until crispy and golden.
