Method
- Dice the chicken into bite-sized pieces.
- Chop the onion and mince the garlic.
- Combine chicken, frozen peas and carrots, onion, garlic, soy sauce, sesame oil, ginger, and pepper in the crockpot.
- Cover and cook on low for 4 hours or high for 2 hours.
- Shred the chicken and return it to the pot. Stir in the cooked rice and beaten eggs, then cover and cook on high for an additional 30 minutes.
- Garnish with sliced green onions before serving.
