  • 2 cups cooked white rice Day-old rice works best.
  • 1 pound boneless, skinless chicken breasts Diced into bite-sized pieces.
  • 1 cup frozen peas and carrots Adds color and nutrition.
  • 1 small onion Diced.
  • 3 cloves garlic Minced.
  • 1/4 cup soy sauce Provides savory depth.
  • 2 tablespoons sesame oil Adds nutty flavor.
  • 1 teaspoon ground ginger For warmth and spice.
  • 1/2 teaspoon black pepper To season.
  • 2 large eggs Beaten.
  • to taste none salt To balance flavors.
  • 2 none green onions Sliced for garnish.

Method
 

  1. Dice the chicken into bite-sized pieces.
  2. Chop the onion and mince the garlic.
  3. Combine chicken, frozen peas and carrots, onion, garlic, soy sauce, sesame oil, ginger, and pepper in the crockpot.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. Shred the chicken and return it to the pot. Stir in the cooked rice and beaten eggs, then cover and cook on high for an additional 30 minutes.
  6. Garnish with sliced green onions before serving.
