Ingredients
  

Chickpeas
  • 1 can chickpeas, drained and rinsed 15 ounces
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, chopped
Dressing
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Method
 

  1. Rinse chickpeas under cold water and let them drain well.
  2. Chop the red bell pepper, cucumber, carrots, red cabbage, and green onions into small pieces.
  3. In a small bowl, mix peanut butter, soy sauce, lime juice, honey, sesame oil, grated ginger, garlic powder, and red pepper flakes until smooth.
  4. In a large mixing bowl, combine chickpeas, vegetables, cilantro, and peanuts. Pour dressing over and toss gently.
  5. Cover and refrigerate for at least 30 minutes before serving.
