Ingredients
  

Cucumber
  • 2 large cucumbers, peeled and diced
  • 1 cup imitation crab meat, shredded
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon fresh dill, chopped (optional)

Method
 

  1. Prepare the ingredients by peeling and dicing the cucumbers, shredding the imitation crab meat, and chopping the red bell pepper and green onions.
  2. In a large bowl, combine the diced cucumbers, shredded crab meat, diced red bell pepper, and sliced green onions. Gently fold the ingredients together.
  3. In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth. Pour the dressing over the cucumber mixture and gently toss until evenly coated.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
