Ingredients
  

For the Brownies
  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
For the Coffee Cream Layer
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon instant coffee granules
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, combine melted butter and granulated sugar. Mix well, then add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to the wet ingredients, stirring gently until just combined. Fold in chocolate chips.
  4. Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes. Check for doneness with a toothpick.
  5. While the brownies cool, prepare the coffee cream layer by whipping together heavy cream, powdered sugar, instant coffee granules, and vanilla extract until soft peaks form.
  6. Once the brownies are completely cooled, spread the coffee cream evenly over the top and cut into squares.
