Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped dates, pitted
  • 1 cup boiling water
Toffee Sauce Ingredients
  • 1 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Method
 

  1. Chop the pitted dates into small pieces and soak them in boiling water for 10.
  2. Cream together the softened butter and brown sugar until light and fluffy. Add eggs one at a time and stir in vanilla extract.
  3. Preheat oven to 350°F. Grease an 8-inch square baking dish. Fold the soaked date mixture into the butter and sugar mixture, then add dry ingredients and mix until just combined. Pour into the baking dish and bake for 30-35.
  4. In a saucepan, combine brown sugar, heavy cream, butter, and vanilla extract. Stir until smooth and bubbling for 5-7.
  5. Poke holes in the baked pudding, pour half of the toffee sauce over it, and serve warm with remaining sauce.
