Method
 

  1. Preheat your oven to 350°F and prepare your ingredients by measuring them accurately.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar for 2-3 minutes until light and fluffy. Add the egg, vanilla extract, and red food coloring, mixing until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until a soft dough forms.
  4. Scoop about 1 tablespoon of dough, roll it into a ball, and place it on a baking sheet, leaving 2 inches of space between each ball. Create an indentation in the center of each ball.
  5. Bake for 10-12 minutes until the edges are set and the centers remain soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Once the cookies are completely cool, fill each indentation with a spoonful of cream cheese filling. Optionally, add festive toppings like crushed peppermint or sprinkles.
