Gingerbread Crust
  • 1 cup gingerbread cookie crumbs
  • 2 tablespoons melted butter
Cheesecake Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup caramel sauce (optional)
  • whipped cream for topping (optional)
  • gingerbread cookies for garnish (optional)

Method
 

  1. Prepare the gingerbread crust by mixing gingerbread cookie crumbs with melted butter and pressing into serving cups.
  2. Make the cheesecake filling by beating cream cheese, powdered sugar, vanilla, cinnamon, ginger, nutmeg, and salt until fluffy.
  3. Whip the heavy cream until stiff peaks form and fold into the cheesecake mixture.
  4. Spoon the cheesecake mixture over the crust in each cup and chill for at least 120 minutes.
  5. Top with whipped cream and garnish with gingerbread cookies before serving.
