  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro, for garnish (optional)

Method
 

  1. Prep your ingredients by washing, peeling, and dicing the sweet potatoes, onion, and garlic.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until soft. Stir in the minced garlic and cook for 1 minute.
  3. Add the ground turkey to the skillet, breaking it up as it cooks. Stir until browned and fully cooked, about 7 to 10 minutes.
  4. Add the sweet potatoes, smoked paprika, ground cumin, oregano, salt, and pepper. Stir and cook for another 5 minutes.
  5. Add the diced tomatoes, black beans, and corn. Mix well and let simmer for 5 minutes.
  6. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle shredded cheese on top. Bake in a preheated oven at 400°F for 25 to 30 minutes until the sweet potatoes are cooked and cheese is bubbly.
  7. Let the dish cool for a few minutes before serving. Garnish with fresh cilantro if desired.
