Prep your ingredients by washing, peeling, and dicing the sweet potatoes, onion, and garlic.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until soft. Stir in the minced garlic and cook for 1 minute.
Add the ground turkey to the skillet, breaking it up as it cooks. Stir until browned and fully cooked, about 7 to 10 minutes.
Add the sweet potatoes, smoked paprika, ground cumin, oregano, salt, and pepper. Stir and cook for another 5 minutes.
Add the diced tomatoes, black beans, and corn. Mix well and let simmer for 5 minutes.
Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle shredded cheese on top. Bake in a preheated oven at 400°F for 25 to 30 minutes until the sweet potatoes are cooked and cheese is bubbly.
Let the dish cool for a few minutes before serving. Garnish with fresh cilantro if desired.
