Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, whisk together the sweet rice flour, sugar, baking powder, and salt.
  3. In another bowl, mix the coconut milk, melted butter, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry mixtures, stirring gently until just combined.
  5. Fold in the shredded coconut and pour the batter into the prepared baking dish.
  6. Bake for 50-60 minutes or until the top is golden brown. Allow to cool for 15 minutes before cutting into squares.
