Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth with a few small lumps.
  3. In a separate bowl, combine rolled oats, cinnamon, and salt.
  4. Mix the dry ingredients into the mashed bananas along with applesauce and vanilla extract until well combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes until golden brown and set. Let cool before transferring to a wire rack.
