Ingredients
  

Chicken and Filling
  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large whole wheat tortillas
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare the chicken by shredding it into bite-sized pieces and mixing it with black beans, corn, taco seasoning, salt, and pepper in a large bowl.
  2. Assemble the wrap by laying a tortilla flat, spreading Greek yogurt in the center, adding the chicken mixture, lettuce, tomatoes, and cheese, then folding and rolling it up.
  3. Cook the wraps in a skillet with olive oil over medium heat for 3-4 minutes on each side until golden brown and crispy.
