Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), unsweetened applesauce, and almond (or peanut) butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. Fold in chocolate chips or dried fruit if using.
  5. Drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
