Ingredients
  

Beef and Vegetables
  • 1 pound beef stew meat Cut into 1-inch cubes
  • 1 tablespoon olive oil For browning the beef
  • 1 medium onion Diced
  • 2 pieces carrots Sliced
  • 2 stalks celery Sliced
  • 3 cloves garlic Minced
  • 8 cups beef broth The heart of the soup
  • 1 cup pearl barley Adds texture
  • 1 teaspoon dried thyme Enhances flavor
  • 1 teaspoon dried rosemary Adds earthy note
  • 2 pieces bay leaves Infuses flavor
  • Salt and pepper To taste
  • 1 cup frozen peas Added at the end
  • 2 tablespoons fresh parsley Chopped for garnish

Method
 

  1. Prepare all ingredients by cutting the beef into cubes, dicing the onion, slicing the carrots and celery, and mincing the garlic.
  2. In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides for 5-7 minutes. Remove beef and set aside.
  3. In the same pot, add onion, carrots, and celery. Cook for 5 minutes, then stir in garlic and cook for 1 more minute.
  4. Return the beef to the pot, add beef broth, pearl barley, thyme, rosemary, and bay leaves. Season with salt and pepper. Stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes. Stir in frozen peas and cook for an additional 5 minutes. Remove bay leaves before serving.
