Cottage Cheese
  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1 cup fresh blueberries or frozen, thawed
  • 0.5 cup milk
  • 0.25 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup chopped walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x9-inch baking dish.
  3. In a large mixing bowl, combine the cottage cheese, rolled oats, milk, honey (or maple syrup), eggs, vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.
  4. Gently fold in the blueberries.
  5. Pour the mixture into the prepared baking dish and bake for 30-35 minutes until golden brown.
  6. Allow to cool for a few minutes before slicing into squares.
