- Preheat your oven to 350°F (175°C).
- Grate the carrots to yield about 2 cups.
- In a large mixing bowl, combine grated carrots, granulated sugar, honey, and melted butter. Stir until well mixed. Add eggs and vanilla extract, mixing until smooth. In a separate bowl, whisk together cinnamon, nutmeg, salt, flour, and baking powder. Gradually add to wet ingredients, stirring gently until just combined. Fold in walnuts if using.
- Pour the carrot mixture into the unbaked pie crust and spread evenly.
- Bake for 40-45 minutes or until set. Let cool for at least 30 minutes before slicing.
