  • 2 cups grated carrots about 4 medium carrots
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped walnuts (optional)
  • 1 9-inch unbaked pie crust

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grate the carrots to yield about 2 cups.
  3. In a large mixing bowl, combine grated carrots, granulated sugar, honey, and melted butter. Stir until well mixed. Add eggs and vanilla extract, mixing until smooth. In a separate bowl, whisk together cinnamon, nutmeg, salt, flour, and baking powder. Gradually add to wet ingredients, stirring gently until just combined. Fold in walnuts if using.
  4. Pour the carrot mixture into the unbaked pie crust and spread evenly.
  5. Bake for 40-45 minutes or until set. Let cool for at least 30 minutes before slicing.
