Chicken
  • 2 large boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Prepare the chicken breasts by placing them between two sheets of plastic wrap and pound until about 1/2 inch thick.
  2. In a mixing bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, chopped basil, parsley, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Spread the herbed ricotta filling over each chicken breast, roll tightly, and secure with toothpicks or kitchen twine.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Sear the chicken rolls for 3-4 minutes on each side until golden brown.
  5. Pour marinara sauce over the chicken rolls and transfer the skillet to a preheated oven. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  6. Remove toothpicks or twine before serving.
