  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 0.5 cup diced bell peppers any color
  • 0.25 cup diced green onions
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika
  • cooking spray or oil for greasing the muffin tin

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, crack open the eggs and add cottage cheese, garlic powder, salt, black pepper, and paprika. Whisk until well combined.
  3. Stir in shredded cheddar cheese, diced bell peppers, and diced green onions until evenly distributed.
  4. Grease the muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
  5. Bake for 20-25 minutes until set and lightly golden on top. Let cool for a few minutes before removing from the tin.
