- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, crack open the eggs and add cottage cheese, garlic powder, salt, black pepper, and paprika. Whisk until well combined.
- Stir in shredded cheddar cheese, diced bell peppers, and diced green onions until evenly distributed.
- Grease the muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
- Bake for 20-25 minutes until set and lightly golden on top. Let cool for a few minutes before removing from the tin.
