Method
 

  1. Wash and halve the baby potatoes, dice the onion, chop the bell peppers, and mince the garlic.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced beef sausage and cook for about 5-7 minutes until browned. Remove and set aside.
  3. In the same skillet, add the halved baby potatoes and cook for about 10 minutes, stirring occasionally.
  4. Add the diced onion and minced garlic to the skillet with the potatoes. Cook for an additional 3-4 minutes until the onion becomes translucent. Stir in the smoked paprika, dried oregano, salt, and pepper.
  5. Add the chopped bell peppers and the cooked sausage back into the skillet. Stir and cook for another 5 minutes. Finally, add the fresh spinach and cook for an additional 2 minutes until it wilts.
