  • 1 pound thinly sliced ribeye steak
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 package low-carb tortillas (8 count)

Method
 

  1. Prepare all ingredients by slicing the onion and green bell pepper, and softening the cream cheese.
  2. Cook the ribeye steak in a skillet with olive oil for 3-4 minutes until browned, then remove and let cool.
  3. Sauté the sliced onion and green bell pepper in the same skillet for 5-7 minutes until soft and caramelized.
  4. Assemble the roll-ups by spreading cream cheese on a tortilla, adding steak and sautéed vegetables, then rolling tightly.
  5. Bake the roll-ups in a preheated oven at 375°F for 15-20 minutes until golden brown.
