- Prepare all ingredients by slicing the onion and green bell pepper, and softening the cream cheese.
- Cook the ribeye steak in a skillet with olive oil for 3-4 minutes until browned, then remove and let cool.
- Sauté the sliced onion and green bell pepper in the same skillet for 5-7 minutes until soft and caramelized.
- Assemble the roll-ups by spreading cream cheese on a tortilla, adding steak and sautéed vegetables, then rolling tightly.
- Bake the roll-ups in a preheated oven at 375°F for 15-20 minutes until golden brown.
