Ingredients

Rolled Oats
  • 2 cups rolled oats These oats form the hearty base of your oatmeal, providing fiber and energy.
  • 1 teaspoon baking powder This helps the oatmeal rise and become fluffy during baking.
  • 1/2 teaspoon salt A pinch of salt enhances the overall flavor of the dish.
  • 1/2 teaspoon cinnamon This adds a warm, comforting spice that complements the lemon and blueberries.
  • 2 cups milk You can use dairy or non-dairy milk, depending on your preference.
  • 1/4 cup maple syrup This natural sweetener adds a touch of sweetness without overpowering the other flavors.
  • 1/4 cup lemon juice Fresh lemon juice gives the dish its zesty flavor.
  • 1 tablespoon lemon zest The zest adds an extra punch of lemony goodness.
  • 1 teaspoon vanilla extract This enhances the overall flavor profile with a hint of sweetness.
  • 1 cup fresh blueberries These juicy berries provide bursts of sweetness and color.
  • 4 ounces cream cheese Softened cream cheese adds a rich, creamy texture to the oatmeal.
  • 1/4 cup powdered sugar If you prefer a sweeter cream cheese layer, this is a great addition.

  • Baking Dish

Method

  1. Gather all your ingredients measured and ready to go.
  2. In a large mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon. Stir these dry ingredients together until they are well mixed.
  3. In a separate bowl, mix softened cream cheese with powdered sugar until smooth and creamy.
  4. In another bowl, whisk together the milk, maple syrup, lemon juice, lemon zest, and vanilla extract. Pour this mixture into the bowl with the dry ingredients and stir gently. Fold in the fresh blueberries carefully.
  5. Grease a 9x9-inch baking dish. Spoon half of the oatmeal mixture into the dish, spread it evenly, drop spoonfuls of the cream cheese mixture over the top, and layer the remaining oatmeal mixture on top.
  6. Bake in a preheated oven at 350°F for 30-35 minutes until the top is golden and set. Let it cool for 10 minutes before serving.
