Ingredients
  

Parsnips
  • 3 large parsnips, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel the parsnips and cut them into 1-inch pieces.
  3. In a large mixing bowl, combine the cut parsnips with olive oil, maple syrup, thyme, salt, and pepper. Toss until well-coated.
  4. Spread the seasoned parsnips in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  5. Remove from the oven and let cool for a few minutes before serving.
