- Preheat your oven to 400°F (200°C).
- Peel the parsnips and cut them into 1-inch pieces.
- In a large mixing bowl, combine the cut parsnips with olive oil, maple syrup, thyme, salt, and pepper. Toss until well-coated.
- Spread the seasoned parsnips in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
- Remove from the oven and let cool for a few minutes before serving.
