Wash and dry all vegetables. Chop cherry tomatoes, slice zucchini and yellow squash, dice red bell pepper, chop red onion, and mince garlic.
In a large mixing bowl, combine all chopped vegetables. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and black pepper. Toss gently to coat.
Spread the seasoned vegetables on a large baking sheet in a single layer.
Preheat oven to 425°F. Roast vegetables for 25-30 minutes, stirring halfway through.
After roasting, sprinkle feta cheese over the vegetables and return to the oven for an additional 5 minutes.
Garnish with fresh parsley and serve warm.
