Ingredients
  

Fresh Vegetables
  • 2 cups cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 medium red bell pepper, diced
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

  1. Wash and dry all vegetables. Chop cherry tomatoes, slice zucchini and yellow squash, dice red bell pepper, chop red onion, and mince garlic.
  2. In a large mixing bowl, combine all chopped vegetables. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and black pepper. Toss gently to coat.
  3. Spread the seasoned vegetables on a large baking sheet in a single layer.
  4. Preheat oven to 425°F. Roast vegetables for 25-30 minutes, stirring halfway through.
  5. After roasting, sprinkle feta cheese over the vegetables and return to the oven for an additional 5 minutes.
  6. Garnish with fresh parsley and serve warm.
